Experience this satisfying Tunisian-Style Chicken and Vegetable Tajine, a diabetes-friendly twist on a North African classic. Shopping List:

– 1 lb chicken breast

– 2 bell peppers

– 2 zucchinis

– 1 can chickpeas

– 2 tomatoes

– 1 onion

– Harissa paste

– Turmeric, cumin, caraway seeds

– Olive oil

– Fresh parsley and cilantro

– Optional: preserved lemon

Recipe:

1. Dice chicken, vegetables into similar sizes

2. Sauté onions in 1 tbsp olive oil

3. Add chicken, spices, harissa (to taste)

4. Layer vegetables and drained chickpeas

5. Bake at 375°F for 25 minutes
