Ingredients

  • 1¾ cups whole wheat pastry flour
  • ¾ cup unsweetened cocoa powder
  • 1 cup monk fruit sweetener (or other sugar substitute)
  • 1½ tsp baking powder
  • 1½ tsp baking soda
  • ¼ tsp salt
  • 2 ripe mashed bananas
  • ½ cup unsweetened applesauce
  • ½ cup plain non-fat Greek yogurt
  • ½ cup strong brewed coffee, cooled
  • ½ cup unsweetened almond milk
  • 2 tsp vanilla extract
  • ¼ cup heart-healthy olive oil
  • Optional: ½ cup dark chocolate chips (70% cocoa or higher)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9-inch round cake pan with parchment paper.
  2. In a large bowl, whisk together flour, cocoa powder, sweetener, baking powder, baking soda, and salt.
  3. In a separate bowl, combine mashed bananas, applesauce, yogurt, coffee, almond milk, vanilla, and olive oil.
  4. Fold wet ingredients into dry ingredients until just combined. Do not overmix.
  5. If using, fold in dark chocolate chips.
  6. Pour batter into prepared pan.
  7. Bake for 30-35 minutes or until a toothpick inserted comes out clean.
  8. Cool in pan for 10 minutes, then transfer to a wire rack.
